Not really sure about nineteen hours, but I know that it is often the next morning after eating "bad" food before symptoms show up. Perhaps the contamination was small enough that it took a while to develop.

I think your ministrations were spot on.  Hope everything is fine.

However, I think your "other half" probably realizes by now the value of the 
old adage:

"Never, never eat something that a dog refuses to eat!!!"  ;-))
