Another way is to define a collection that filters out red items

    <div ex:role="collection" ex:baseCollectionID="default" id="no-red"
        ex:expression="filter(value, not(contains(.color, 'red')))"></div>

Then wire your views and facets to that new collection, e.g.,

    <div ex:role="view" ex:collectionID="no-red" ...

    <div ex:role="facet" ex:collectionID="no-red" ...

Of course that totally filters out red and there's no UI for you to 
include red things on the fly.
