I act as secondary MX hosts for both my own servers, and a clients (also
using sims as a front end to Microsoft Exchange), and in my experience the
IP's of secondary are not required in the client hosts if configured
correctly.

the router entry on secondary sims boxes however should be:

primarydomain.com=primarydomain.com.smtp


if your router entry was:

primarydomain.com=mail.primarydomain.com

the IP still wouldn't have to be in the client hosts, but one of two
things needs to be in place for the mail not to be rejected (as passed
from the secondary to the primary mail server for the domain).

1.  The primary mail server would have to have mail.primarydomain.com in
the general settings.  This is probably unlikely though, as it's more
likely to have primarydomain.com there.
2.  The primary mail server would have to have a router entry as follows
on a mail server that has primarydomain.com in the general settings:

mail.primarydomain.com=primarydomain.com or less specifically if
applicable:
*.primarydomain.com=primarydomain.com


Otherwise, yes the mail would be rejected as the original poster is
experiencing because the sims box hasn't been told via the router to
accept mail for the SUBdomain "mail" in the the primarydomain.com
