Because MacDNS doesn't support recursion (TIL 22002).

Looks like QuickDNS is the only way to go, then, at least on the Mac. I just confirmed 
that MIND/NonSequitur doesn't do recursion.

Philosophically, though, I think the idea of "parent" servers as used in MacDNS makes 
sense as a way of distributing the load. However, I assume the issue has been pondered 
by some very bright minds and resolved in favor of everyone doing their own recursion.
