That would only work with messages sent by dropping files in the submitted
folder. Messages sent via SMTP from a user's e-mail client (the normal method)
don't pass through the submitted folder. You might be able to intercept
messages as they go through the queue folder (wasn't there a discussion along
those lines recently in regard to virus scanning?).

Even at the 'All Info' logging level, SIMS doesn't log the content of
messages. Not to mention that logging all info as a matter of course (as
opposed to just while debugging a problem) would result in huge log files.
