I currently run 3 different mail servers (2 dedicated to domains, and one
that handles 5 different domains). The FASTEST of the machines is a
Performa 630, which is a 50mhz 040. It has 36mb of ram and a 500mb hard
drive. NEVER CHOKES, not one bit, and it probably pushes 2000+ emails a
day and about 100 accounts.

I have also run SIMS successfully (and am still doing so as a backup
server for about a dozen domains) on a PowerBook 160, which is a 16mhz
030 with 10mb RAM and an 80 mb HD. I ran that as THE server for my fire
department (SIMS, Netpresenz, MacHTTP) for about a year before it was
upgraded to a centris 610 (20mhz 040, 36mb ram, 250mb HD). Not because of
a problem with the laptop, but because the centris became available, and
it enabled me to pool servers together (that centris is now the above
mentioned server running 5 domains, it runs SIMS, QPQ, and NetPresenz,
and although QPQ chokes on heavy loads, SIMS runs just fine and pushes
about 1000 emails a day and about 200 accounts over the 5 domains).

And when I FIRST started with SIMS, I had it running on MY machine (this
one I am typing at) in the background, along with MailTron Gateway to
collect a unified POP account to feed into SIMS, and IPNetRouter to give
the network access to the internet over a 56k dialup. All was run in the
background while I used my machine for regular daily work. This one is a
PowerMac 6500/250 (250mhz 603ev, at the time 64mb RAM and 3gig HD). SIMS
again, never posed a problem.
