Most likely the mail will bounce.

Suggestion #1: shut down your server during the transition - any mail server can 
survive an interruption of a couple of seconds, and no mail will be stuck.

But if you're really into not wasting a single second, here's suggestion #2: use 
aliases
- make an alias to the old account with a temporary name
- modify the router to point to the temporary name
- rename the account with the new name, the alias will follow
- modify the router to point to the new name

I suppose this user will then tell her friends about her new address, and then you 
will cancel the routing?

I love it when she says she tries to cancel but this doesn't work; it reminds me of 
users who don't want to use the network, it's too dangerous; they only want to check 
their mail and browse a few websites but nothing more :)
