Decreasing the TTL(s), along with adding an MX record (of equal or lower
priority) for the new server, would limit your "downtime" to whatever you
lower the TTL(s) to -- that's assuming, of course, that you make these DNS
changes soon enough; that is, if the current TTL on your MX record is
2 days, and you are going to change the TTL(s) to 1 hour, be sure to make the
change at least 49 hours (2d + 1h) before your "old" server goes away.
Then, as soon as your satisfied that your new server is up and
running (reliably!), change the TTLs back to whatever you'd like.

Any connections that attempt to go to the old server during the 1-hour
transition time should get retried periodically until they hit the new
server (although the "Queue Return" time is configurable on most mail
servers, I have never seen anyone set it lower than 4 hours, and for
many cases the default is 5 days).
