Note that, although I prefer NetBSD as my own server platform, Mac OS X is

I do not recall how to do this in postfix, but note that postfix is not a
pop3 server, only SMTP. I use courier (courerier-mta.org) on NetBSD and it
handles this type of thing effortlessly with aliases similar to the way
SIMS works.

If you need pop or imap I would definitely consider courerier, as it is a
nice all-around package. That is not too hard to setup, once you get the
hang of it. Postfix is also an excellent SMTP server, and I use it on a
few machines that only need SMTP.

Subscribe to the postfix mailing list off the postfix.org site. The people
there are very helpful, though sometimes brusk...
