Learning the differences

I'm not ready to give up my SIMS box yet, but since I now work at an 
Apple Specialist I was able to get a copy of OS X Server to install for 
learning it's ins and outs.
I'm working my way through the mail set up and configuration and I was 
wondering if anyone else on the list uses it if I could pick their 
brain a bit.
You can contact me off-list if it's more appropriate.
My main questions are:

1. Can I do spamtraps?
2. How do I do what I accomplish with '<[EMAIL PROTECTED]> = example-*' & 
'<[EMAIL PROTECTED]> = david' with OS X's server?

Actually, I guess that for now those are the only questions I have. 
Seems that I've figured out most everything else... I think.
