There are security issues that may arise by revealing the IP addresses of
your internal devices and users. Attacks, privacy concerns, etc.

In any case, via hiding as specified in rfc2543 has been deprecated. Rather,
via hiding can be accomplished using local mechanisms on the proxy which do
not require standardization. For example, it can simply remove the via
headers and store them on disk, re-constituting them into the response as it
goes by.
