Thanks, that is what I ended up doing (setting the nameservers in the
"DNS" menu item after flipping DNS on).  Had a little oddity with some
/var/named entries being replaced (coincidentally after a "Send
Profiles" - not sure that is related at all) but I am watching out and
it seems that was maybe just a quirk.

What you probably want is to set forwarders in your dns settings and not
go unmanaged.  Best of both worlds

No, it looks like you have DNS role enabled on that machine and
sipxecs managed. What you could do here is to go to System > DNS >
Unmanaged Service and enable Unmanaged DNS service option. This way
config files will not be overwritten by sipxecs
