We use 8 VM setup for sipXecs trainings - 4 groups of users each with their "own" HA setup with separate DNS and DHCP. Each VM on a different VLAN.
But this is XEN not VMWare.

This is paravirtualized setup on a single quadcore Q9950, 12GB machine and VoiceMail, IVRs and sipXbridge/relay suffer from jitter problems that are beyond default polycom limits. Good for trainings/development not good for production unless You have no intention on anchoring RTP streams on VMs.

No such problems when we use virtual containers from OpenVZ.
