yes definitely when using a different dhcp server something has to be done manually. I belive this is the case of Polycom phones too. For a windows server it is perfectly possible to configure snom phones for auto provisioning. This is what I'm currently using. I don't know if it's possible to archive the same result of dhcpd.conf choosing different options for different mac. In case it's not possible, if someone want to use polycom and snom on the same system ... in my opinion it's better to use a dhcpd on sipxecs or in another linux machine.

We can certainly put it in the default dhcpd.conf file, but it becomes part of the explanation of how/why snom provisioning doesnt work if they dont add the code to their linux dhcp server somewhere else or "how" to implement it on a windows dhcp server (is that even possible)?

        I'm perfectly aware that some people use another dhcp server,
        so I do.
        But at least in some cases there would be no need to configure
