In your image's /etc/systemconfig directory, do you have a file called systemconfig.conf?
 
If you use SystemInstaller, it creates one for you like this:
# systemconfig.conf written by systeminstaller.
CONFIGBOOT = YES
CONFIGRD = YES
[BOOT]
        ROOTDEV = /dev/sda6
        BOOTDEV = /dev/sda
        DEFAULTBOOT = 2.6.9-22.ELsmp
[KERNEL0]
        PATH = /boot/vmlinuz-2.6.9-22.ELsmp
        LABEL = 2.6.9-22.ELsmp
[KERNEL1]
        PATH = /boot/vmlinuz-2.6.9-22.EL
        LABEL = 2.6.9-22.EL
Perhaps this will give you some clues?

Ok..

Uh, Its a "little" better.

It is now rewriting /etc/fstab with /dev/hda or /dev/sda depending on which
is which, but it isnt updating my /etc/grub.conf or my /boot/grub/grub.conf
(menu.lst symlink).

Basically the system works entirely except it isnt writing the grub.conf,
any more ideas anyone??

What I mean by that is, if I install on SATA drive, then this is in
/etc/grub.conf

title CentOS (2.6.9-22.0.2-EL)
    root(hd0,0)
    kernel /vmlinuz-2.6.9-22.0.2.EL ro root=/dev/sda3
    initrd /initrd-2.6.9-22.0.2.EL.img

but if i then IMAGE this image onto an IDE drive, the kernel line is no
longer valid, it needs to change to /dev/hda3.

Any ideas??
