Skim uses a template file for export of notes as text. You can  
customize the template file that is used for the export. The Skim Wiki  
has a full description of how to do this, look in the Tips & Tricks  
section.

Be aware however that part of that description will change a little  
bit for the next release, which should come out somewhere this week (I  
hope).
