Christiaan will correct me if necessary but that is probably because Skim is 
based on Apple's pdfKit and not on the non-open-source Adobe software.
Therefore Skim will unfortunately never be able to do everything Acrobat Pro or 
even the Reader can - unless of course Apple integrates it into pdfKit.
