Three ways: 1. Select the note, show the Font panel (Cmd-T), click the Text Color button at the top of the panel, choose a color. 2. Don't select a note, show the Color panel (Shift-Cmd-C), choose a color, drag the color, and drop it on the note while holding the Option key. 3. Use AppleScript.
