If I understand your question, you want to select an object and have CDC
track that object as it refreshes the star positions as time passes. Without
a telescope hooked up, I don't know how to do that. But if you have a goto
telescope connected to CDC it's really easy. 
 
Under the Telescope menu there should be a Track Scope Position. When you
select that, CDC will periodically ask the scope where it's pointing and
(roughly) center that location on your screen. The frequency that it updates
the scope position is controlled by the panel you use to attach to the
scope. It doesn't need to be very often and certainly no more often than the
rate that CDC refreshes itself. I generally use 2-5 seconds.
 
This isn't really tracking the object you are aiming at -- it's really just
tracking the scope. But I think it will do most of what you want.
 
BTW there's also a toobar "Track" button that accomplishes the exact same
thing.
 
Note, the Track toolbar button has a small bug with a big explanation:
Normally when you turn on the Tracking, the button becomes red to indicate
that tracking is on. If you turn off tracking the button returns to its
normal (usually black) color. However, there are times when CDC will turn
off scope tracking by itself. The most common is when you tell it to look at
another part of the sky. If it cannot track the scope position and show you
the new location at the same time it will ask you if you want tracking to
turn off. If you say yes, it cheerfully turns off scope tracking and shows
you the part of the sky you asked for. However, it forgets to turn off the
red font on the Track toolbar button. So if you see a red Track button you
cannot assume that tracking is on.

Hello,

When observing I prefer to have the view refresh automatically so it most
closely resembles what's out there. The problem is that in this case the sky
moves 'underneath' the projected area and the selected object is no longer
centered. How do I prevent this from happening? I could turn off 'refresh'
but that's not recommended when connected to a scope so I'm hoping there's a
way to make this happen.

In a related question, how do I keep the little arrow present in the screen
when I zoom in or out? I mean the arrow that points at the selected object.
