the only thing to do is to contact a lawyer before you do anything else.
the fact that the proprietary information was stolen with the aid of a
computer should make little or no difference (except that they were too
stupid to delete their sent-mail folder and left evidence behind), theft
is theft and the law has been dealing with these sorts of situations for
years.
i am not a lawyer, the above is just my uninformed opinion and is not
legal advice.

contact a lawyer, and be careful what you do and say here - even if what
you say is true, you may end up liable for libel or slander especially
if your intent is to harm the reputation of the ex-employee (which would
probably be easy to prove if you go around dobbing him/her in to the new
employer).
