As a DESKTOP replacement, I'd go for SuSE 7.0 running KDE (1.1.2 or
2.0).

Hmmm... Or you can look at Applixware - if the users are used to
EvilWare Orrifice, Applixware's GUI is a more gentle introduction.

Good suggestion - IF your machine is capable of running it -
Photoshop is second only to Office as a memory / resource hog, so
the box'd better have plenty of grunt.

If you're talking about an interface from Windows clients, they
will see the appropriate Samba shares in their Network Neighborhood.
If you're sharing the other way (loking at the Windows boxes from
the Linux box), a simpler solution is a shortcut on the desktop for
the appropriate share(s).
