The best application I've come up with is storage for secret keys (ssh, PGP,
etc).  Stick it in the machine you're on, mount it in the right place, and
do your thang.  Then you pull it out and there's no trace of your keys on
that machine anymore (well, excluding OS caching).  Sure you can do this
with a floppy disk, but they're more prone to breakage, and a Memory Key
fits on your keyring.
