In GNOME, you can load the ScreenShooter applet, and have a screenshot of
a window or the entire desktop saved to a file. In a newer, unreleased
version, you'll be able to hit printscreen and have a dialogue pop up for
you to save interactively (I half remember KDE already doing this).

You can't do it from the clipboard directly as yet, though I'm sure it would
just be a matter of OpenOffice support for sucking in the image data were it
put on the clipboard in the first place.
