True to precedent I managed to fix it moments after sending a message to slug. Evolution doesn't let you edit the contacts if you are connected anonymously. So in the account settings in Evolution I had to put in the login method using DN and put in the DN for the server. I didn't care about permissions on the server while it wasn't working, so I just allowed write access to everyone on the LAN - now to get it working with authentication.
