Grant, The best way IMO to lean Linux is by doing and self learning, with a bit of a guiding hand along the way. The road in has significantly softened with the advent of cheap Linux machines that have a desktop environment and a thriving community around them.
I suggest buying an RaspberryPi and take advantage of the 1000's of example projects now on the web.
