Have done similar things with Debian, and it has worked fine. Unfortunately 
the Bootprocess in Ubuntu is somewhat arcane magic compared to Debian.

One question are you using LVM on Raid? If you were using LVM this is just a 
simple matter of specifying some new mount points in some free space and 
doing the install to a new LV. Then if it works nuking the old /root etc and 
resizing the space.

Using Raid without LVM is kinda like shooting yourself in the foot in my 
experience.
