I have been largely working on signal processing with Arduino, with
Pure Data and sometimes when that's not available - Max/MSP. My first
project was a trigger kit, which consists of a piezo (the transducer),
some 1/4" cables/jacks, the usual capacitors and resistors, and
finally some good Pd code. This worked by setting a threshold for the
audio signal and working from there, but the other way is via MIDI and
that I have yet to undertake.

There are a lot of fun stuff one could do with the Arduino
microcontroller and Pure Data (sometimes you may want to couple it
with SuperCollider, CSound and/or ChucK). I had a great time trying to
get the clap-and-lights-on thing to get going, and the last time I
laid my hands on it I was on to fans (the swinging plays a different
light and different audio tone every set interval).

Your kids will love it.
