David,
If youre going to run stuff like Oracle/Sybase/Veritas/etc on your box then
most definitely you would want to consider going for RedHat. In the event that
you encounter an issue with time working against you, and you got clients
breathing down on you behind your back, you can get these vendors to work
together with you to get your service up and running with the minimum amount of
downtime. You can get their SLA work for you. Also, some vendors tend to be
very picky when it comes to the OS (flavor) they support.
On the other hand, CentOS would be the best choice if the stuff youre running
on the box are mostly, if not all, FLOSS.
I think to attain maximum uptime, you'll need to consider what you will run on
top of your OS and what hardware you will put your OS on, aside from the OS
itself.
