I have a BEFSR41, and I can change the IP to anything... Perhaps you are looking at the DHCP tab.
If your screen does not look like what is in the user guide (ftp://ftp.linksys.com/pdf/befsr11_befsr41ug.pdf), I would suggest upgrading the firmware, but it seems unlikely that this is your problem.
