As I explained, there will be no mirroring and no replacing of disks.
Just one disk that is larger than the image that was written to the disk.
Will autoexpand also work in that case, i.e. when the system boots
to find a larger disk then what is in the GPT label?

Non-mirrored (single disk) should also work for booting IMHO.
