Spam filtering (and content filtering) are sadly lacking on the  
iPhone. Some of this can be taken care of by using a decent ISP, and I  
expect that Apple and/or third parties will address these shortcomings  
eventually.

For mail folders the best strategy is probably to use IMAP rather than  
POP for your email, especially if you are going to access the same  
email account(s) from your Mac and iPhone.
