Hi Tamsin If you click the blue square with a black triangle inside it (next to the printer name in the printer dialog box) it'll give you all the options you need to choose specific pages. The Epson multifunctions are decent printers with excellent mac compatibility.
I'm not surprised that the HP printer didn't work very well, their mac software is bloated and unnecessarily complicated. It would help to know more information about your mac, what version of OS X is it running? 10.4 or 10.5? How much hard drive space and how much RAM does it have? You can find all this out by going to the Apple menu > About this Mac > More Info.
