How about adding pages to a PDF document in Preview - I know how to do it in Acrobat - but it would be so much more convenient to do so in Preview.
A typical scenario - I am scanning a large document and the scanner has a paper jam half way through - I can abort and start again - or continue from the jam and have two PDF documents which I need to join together into one document.
