Hi Liam Kernel Panics are normally traceable, system freezes are normally indicative of bad RAM, freezes with graphic artefacts onscreen are almost always bad graphics cards/logic boards. Have you tried removing/replacing the RAM on the iMac? It's usually the cheapest thing to try first.
You could also try zero-formatting the HD before you reinstall the OS from scratch, then keep the system vanilla for a week or so to test. Then put back on your file/software slowly, testing after each time.
