I don't think you're 10 years behind, the + was only added in Snow Leopard or Leopard I think. Someone else may know better ....
In Mail it's not so easy and you have four options really (as far as I know): 1) Search in Mail 2) Set up Smart mailboxes in Mail which allow you to set up permanent search queries in the same way as the Finder 3) Use MailTags - http://www.indev.ca/MailTags.html 4) Use Spotlight. Type Kind:mail and then select Show All then use the + as before in the resulting Finder window. This doesn't work if you just open a Finder window and type the same thing!
