Many thanks to both Sam and MacFixer, partioning as GUID first, then restoring
did the trick (in the event it booted immediately after restoring, no need
even to re-install OS X).
So if I'd spent an extra two minutes in the first place, it would all have
gone smoothly. Pah!

Boot from the OS X installer DVD, go to Disk Utility, click on the device (not
the volume name), click on the partition tab, select 1 partition, click
options, select GUID, click OK & Apply. That should format the drive as GUID
rather than Apple Partition Map.
Once that's done, re-clone from the drive and reinstall OS X. You'll need to
re-clone as partitioning wipes all the data and reinstall OS X to resolve the
boot issue with the no-entry sign.
