Hi Simon.  I have had lots of trouble with iCal over the years.  What I have 
discovered is that I must be sure that the right calendar is showing on (for 
instance) the IPhone if I want it to sync with my desktop computer.  In my case 
this has to be me.com's calendar.  If I enter something onto the wrong calendar 
it won't show.  Doubt if this will help you but I thought I would let you know 
just in case it does.
