You could quit Skype 5.0 and open Skype 2.8. (You can have both in your
Applications folder or can be done from another PC)
Then select the contact from the contacts list and use from the Menu.
Contacts/Remove Contact.
That Contact remains in the contacts list (with ? marked), but they are
not able to see when you are on line.
That must be a bug in Skype 5.0 and hopefully will be corrected on the
next upgrade.
