I went through the same process, but was unlocking a Tesco-locked iPhone
and switching to 3. I didn't get what you describe but I do recall
iTunes requesting a re-registration of the phone the next time I
connected it to iTunes. Maybe this is your problem? Perhaps try
re-connecting it to iTunes now its been unlocked?

confirming the unlatching instructed me to place another SIM in the phone and
connect to iTunes. This I did and iTunes informed me the phone was now

manually input the O2 settings. So far, so good.
Sending texts, and making and receiving calls, and looking at email, no
problem. But problems arise when I try to use any of the installed apps. They
open momentarily and then close. The only apps that work are the ones that came
with the phone.
Any suggestions as to what might have happened and what needs to be done to
rectify the situation will be gratefully received.
