Hello Jason, Pages doesn't let you edit Word documents - what it does is convert your Word document into a Pages document and then let you edit the Pages document. That is why it creates a new document each time. The only way to edit a Word document directly is ... to edit it in Word. When it wants to save it then just press Command-D for Desktop, name it and then file it later wherever you want it to go.
Conversely to get a Word document out requires File > Export > Word ... Hold down the Option (Alt) key when selecting the File menu in Pages and you will see "Save As ..." listed.
