It may be that your keychain has been corrupted, which happened on my Mac recently.

Try running Keychain Access from your Application/Utilities folder
Choose Keychain First Aid from the Keychain Access menu
Choose the Verify button and Start
If necessary choose the Repair button and Start
With a successful repair, you will still have to enter your password, but it will be remembered for future starts of email, etc..
