Thanks Tony. That suggestion basically solved it for me. It's the easiest way round my dilemna, for the moment at least. I rather liked having what was in Mail as an exact replica of what was at Gmail online, but it's not working easily with their All Mail obsessions!
Having Gmail now host my mail and merely forward it to iCloud for me to sort is basically fine. In fact, knowing that it's all there archived in Gmail to hunt down things deleted in error might be no bad thing!
