It certainly does! My iPod touch is running iOS7 and I don't think it has ever crashed.
My iPad Air though crashes at least once a week since I've had it whereas my old iPad Classic crashed about twice in 3 years! It seems to happen either when using Safari or using the multitasking viewer to flip between apps, often at the moment I double-click the Home button. There are probably other times too but as you say it's all so fast it's hard to know. I've contacted Apple at least twice.
