I've *tried* it and just bought a Macbook Air...;)
But if you want to go ahead, iTeleport is not bad. Teamviewer also works
though I seem to need to get my password more often than I'd like,
haven't troubleshooted it saving that (or not). Usually the critical
thing is the network connection speed.
Will the Mac Mini have a monitor attached? If so, you might need to set
the size differently (teleport seems to adjust it). Logmein used to be
my favourite but started charging.
There are lots of VNC clients for if you are only ever going to be on
the same network.
