That happens when Apple Mail auto-saves a draft of an email you're writing 
while you're writing it. Mail then deletes the emails but Gmail keeps a copy of 
them in the Trash. Go to the Mail menu > Preferences > Accounts > your gmail 
account > Mailbox Behaviours > untick 'save drafts on server'
