I'm liking the subtle Mail changes; nice animations, more fluid. I like slideover on my iPad. I'm noticing the new San Fransisco font far more on my iPad than on the iOS 9 beta I've been using for months on my iPod touch.
BTW, no app crashes with the beta but many OS glitches. They have been fewer and fewer with successive betas and none with the GM. Hopefully none with the real one either! Also, the two finger cursor thing on the iPad keyboard is fab. (Not as FAB as the forthcoming Thunderbirds episodes will be though) Stephen We are Costa of Borg.
