If I may suggest, I think the simplest solution is to buy something like a
Tascam or Zoom SD Card audio recorder.  There are alternative Audio to
digital boxes out there but these would be around the same kind of price I
think.  They also would make good stand-alone recording devices if you are
at all intererested in recording audio.

I have also had minor issues with what I would call latency (brief time
periods when the sound is not recorded meaning that over a whole hour the
file is just a little shorter than it should be) when recording audio
direct into a Mac.  My stand alone recorder does not exhibit this.
