Just wondering if I'd really notice the difference in the above with a 2017 
vs 2019 iMac?

Would the older i5 be ok and reasonably future proof for macOS upgrades in 
years to come?!

Finding the latest product comparisons tricky in determining value for 
money, whilst buying a 2 year old chipset seems a little risky too!
