Chris, The "LiveCD" version of Mepis is called SimplyMEPIS. All the ISO files on the MEPIS mirrors that say SimplyMEPIS are Live CDs.
Also there are plenty of other LiveCDs out there, Knoppix I believe was the first, or at least one of the first. I'd suggest MEPIS over Ubuntu - it has more stuff.
