there is various weird hardware on the market:

Serial to Ethernet CONVERTER - 4 port
RS232/422/485 - 10/100 Mbps 

or what you are looking for:

USB TO 7 PORT RS-232 DB9M (there is also a 4 port version I think)

In your case you could use a quad ethernet port with a 5501, giving
you 7 + 1 ethernet ports + a USB 2 serial for 7 serial ports. There is
also one extra serial port onboard of the soekris that you could use.

Downside is that is all becomes a bit of a cable salad, or you have to
put everything in a rackmounted case
